Fish and Vegetable Parcels

1. Pre heat oven to 180 C

2. Tear 6x pieces of tin foil approx 50cm long

3. Place 1x fish fillet on each piece of tin foil length ways

4. Top each piece of fish with cabbage, carrot, corquette, mushroom, tomato, parsely and butter cubes. Share evenly over each piece.

5. Season with salt and pepper

6. Pick up the two long edges of tinfoil at the top and fold down. Folder over the two ends to complete the parcel. All juices will stay inside the parcel to steam the fish/vege

7. On a baking tray/dish place the cubed potatoes and lightly drizzle with oil.

8. Season with salt & pepper. Roast for in oven for 30 mins.

9. Once fish parcels and potatoes are cooked, serve together.

2 cups thinly sliced cabbage

2 shaved carrots (use peeler to shave strips)

1 red capsicum thinly sliced

2 tomatoes diced into small pieces

6 mushrooms thinly sliced

chopped parsley

50g butter diced into small pieces

Salt & pepper

Tin foil

6 potatoes cubed

Oil
